We jumped into things with a rolling start so here's a little introduction for Derek.

Derek Nance is a brilliantly creative and open minded autodidact who's learned a wealth of information along his journey to heal from chronic health issues. Derek focuses on living a clean, nutritious, holistic lifestyle, and it clearly works for him. His clarity in skin is matched only by his clarity in mind. No longer chronically fatigued, brain fogged and depressed, Derek enjoys great quality of life and well-being attributing the turn around largely to meticulous attention to diet, clean spring water, and being outdoors to soak up loads of sunlight and fresh air. Most outstanding, one might think about Derek, is that about 90% of his diet consists of mature sheep (mutton) raised as organically as possible. But what's even more interesting is that he slaughters and harvests the meat himself, and dry ages it in the fridge until he consumes the entire animal "tongue to tail" completely raw over the course of a few weeks. We never got into discussing his diet because I find he's fascinating to chat with on so many other levels, but I intend to have him on again when he has more time, specifically to discuss diet and nutrition, focusing on what has and hasn't worked for him.

You can tell Derek doesn't subscribe to the same media and academy-curated beliefs the majority of people do. So listen to us go off on tangents about all sorts of alternative topics, from how ruling classes of past and present like to limit the meat intake of the common folk as a means of subjugation and control, to what the reductionist scientific and medical views today can't seem to see, or refuse to look at, about a wider image of what it means to be healthy.
