This Creamy Taco Soup comes together with ease, can be made in numerous different devices, and is highly customizable! The way I made it in the video is a perfect Keto or low-carb option, but take this recipe and make it your own! Stretch it out with beans or rice. Add corn or tortillas - you cannot go wrong with Creamy Taco Soup - especially this time of year. So check out this video and make this soup!

Grocery List:

Oil of choice for bottom of pot for browning beef
2 lbs. ground beef
1 quart (32 oz) beef broth
1 large yellow onion, diced
2 small green bell peppers, diced
1 jalapeno pepper
2 cans (14.5oz each) diced tomatoes
4-5 tsp instant garlic, or 4-5 cloves minced
4 tbsp taco seasoning
(2) 8 oz package cream cheese
Salt and pepper to taste
Garnishes (watch video)

Instructions:

1) Begin by browning ground beef, for a true "One Pot Stop" use 6 qt Instant Pot on the sauté function.
2) Once beef is browned, add broth and stir in. Use broth to scrape off any fond at the bottom (if present)
3) Add the peppers, onions, and jalapeno.
5) Add garlic
6) Add tomato, drain first if using canned
7) Add Taco Seasoning, stir all ingredients around to ensure even distribution
8) Start out by cooking for 3 1/2 hours, (on HIGH if using traditional slow cooker and not having browned beef, LOW is okay if otherwise) leave cream cheese out to soften
9) After 3 1/2 hours, check to make sure peppers and onions are soft as you like, if so add cream cheese, and cook for another 30 minutes.
10) Serve with avocado, cilantro, sour cream, basically anything taco-y!
