Chocolate Cake Recipe

Ingredients:
2 eggs
1 c milk
1/2 c coconut oil
2 t vanilla extract
2 c sugar
1 3/4 flour (substitute 1 for 1 GF flour easily!)
3/4 c cocoa powder
1 1/2 t baking powder
1 1/2 t baking soda
1 t salt
1 c boiling water

Frosting:
1/2 c butter
2/3 c cocoa powder
3 c powdered sugar, sifted
1/3 c milk
1 t vanilla extract

Cake Instructions:
1. Heat oven to 350
2. If you’re using 9” round cake pans, grease them with coconut oil (please, please stay away from cooking sprays. They may be convenient, but they’re not good for you!). If you’re using cupcake pans, prep them now.
3. Add eggs, milk, oil, and vanilla to a mixing bowl and mix for 2 minutes until smooth.
4. Combine dry ingredients in a separate bowl.
5. Mix with wet ingredients. Do not over mix.
6. Add boiling water and combine.
7. Pour cake batter into pans or fill cupcakes 3/4 full.
8. Bake cakes for 30-35 minutes (cupcakes about 20 minutes) until the top is spongy.
9. Cool completely before frosting

Frosting Instructions:
1. Melt butter
2. Add in cocoa and mix.
3. Add sugar and milk and mix until smooth.
4. Adjust with more milk if it’s too thick.
5. Add in vanilla.
6. Frost when the cake has cooled completely.
