Recipe
Pork and chicken (1:1). Only 1kg.
Chicken leg 1 pc.
Chicken fillet 1 pc.
Table salt 10 gr.
Nitrite salt 10 gr.
Spice mixture to taste 4 gr.
I have this: ground allspice, ground black pepper, dry garlic.
Garlic 3 cloves.
Cold water 80-100 ml.
I heat the water to 80°C. I turn the heat to low.
Cover and cook at this temperature for 1 hour and 20 minutes.
I put the cooled sausage in the fridge for 4-8 hours.
My sausage is ready.
