Ingredients:
• 1 whole turkey, thawed if frozen
• 1 tablespoon olive oil
• 1 teaspoon salt
• 1/2 teaspoon black pepper
• 1 onion, quartered
• 2 carrots, quartered
• 2 celery stalks, quartered
• 2 sprigs of fresh rosemary
• 2 sprigs of fresh thyme
Instructions:
1. Preheat oven to 325 degrees F (163 degrees C).
2. Rinse the turkey inside and out and pat it dry with paper towels.
3. Brush the turkey with olive oil and season with salt, pepper, and herbs.
4. Place the onion, carrots, and celery in the bottom of a roasting pan.
5. Place the turkey on top of the vegetables and roast for 3 hours, or until the internal temperature of the turkey reaches 165 degrees F (74 degrees C).
Let the turkey rest for 20 minutes before carving.
