A new study suggests that simply swapping one serving of starchy carbohydrates for vegetables daily can significantly improve fatty liver disease (NAFLD), even in advanced stages. Researchers found that after just three months, this minor dietary change led to reductions in liver fibrosis, inflammation, and other NAFLD markers. The key seems to be the type of vegetables chosen: the study focused on four cruciferous varieties (mizuna, chicory, kale, and Chinese mustard) rich in glucobrassicin-derived compounds with antioxidant and anti-fatty liver properties. This easy-to-implement dietary tweak could offer a promising first step for managing and potentially reversing NAFLD.
