I don't care if you're vegetarian or not, you gotta check out my "Smoky Black Bean Vegetarian Chili!" Whether you're a vegetarian or not, you're going to love this chili. With its deep, complex flavor profile everyone will find something to tickle their taste buds that will keep them coming back. This wonderful chili has the perfect contrast of sweet and heat, an added dimension from its Italian influenced spices, and to top it off the smoked tomatoes provide a contour unlike any meatless chili you have ever heard of. The Smoked Tomatoes & Alternative:

I keep quart containers of my smoked tomatoes in my freezer that I use instead of canned diced tomatoes. The process for doing this is to halve the tomatoes (romas work best) and place on smoker at lowest setting for 2-3 hours. Remove from heat and place in an ice water bath, this helps release the skins. After a couple of minutes in the water bath you should be able to peel off the skins, and then discard (skins, that is.) Then dice the skinless tomatoes and use immediately or freeze for later use. Ingredients:

6 cups cooked black beans
2 cups vegetable broth
1 medium red onion
1 large red bell pepper
30ish oz smoked diced tomatoes
2 ribs of celery
1 medium carrot
4 cloves of garlic
olive oil (for softening onions)
2 tsp seasoned rice vinegar
2 tbsp chili powder
2 tsp smoked paprika
1 tbsp kosher salt
1 tsp oregano
1 tsp thyme
2 tsp cumin
2 bay leaves
cilantro and avocado for garnishes
1 aurora pepper (optional)
1 banana pepper sliced (optional)

Instructions:

1) Make black beans in your Instant Pot, 2 cups of dry beans will make 6 cups of cooked beans. Use 8 cups of water only, do not add seasoning, pressure cook normal for 30 minutes followed by a 20 minute natural release. Once complete drain and rinse.
2) Set Instant Pot to Saute mode, coat the bottom with olive oil. Dice onion and add to bottom along with the garlic cloves: pressed.
3) Once onions and garlic are nice and aromatic and the onions are becoming translucent, add bell pepper: diced
4) After a couple of minutes, switch Instant Pot to Slow Cook mode, add the remaining ingredients, stir well to mix everything together.
5) Allow to cook for 2-3 hours and then use a cornstarch slurry to thicken to your preference (this step is optional)
6) Serve with your favorite garnishes, I prefer avocado and cilantro with this chili.
