Creamy Spinach Corn Paneer Bowl (Serving 2):

Ingredients:

1 tsp olive oil
Garlic (2 cloves, sliced )
Corn (3 tbsp, cooked)
Spinach (2 cups, chopped)
Paneer (80 gms , cubed)
Almond flour (2 tbsp)
Low-fat milk (1 cup)
Oregano (1 tsp)
Salt (to taste)
Black pepper (to taste)
Chilli flakes (to taste)
Salad (mixed greens, 2 servings)
Rice (1 cup, cooked)
Instructions:

Heat olive oil, sauté minced garlic, add corn, spinach, and paneer.
Stir in almond flour to thicken, pour in low-fat milk, and let it simmer until creamy.
Season with oregano, salt, black pepper, and chilli flakes.
Serve over cooked rice and accompany with a fresh salad.
