Ingredients:
2 large avocados, sliced into fries
1 cup panko breadcrumbs
1/2 cup all-purpose flour
2 eggs, beaten
1 cup shredded cheddar or pepper jack cheese
1 cup salsa (homemade or store-bought)
1/2 cup sour cream
Juice of 1 lime
Fresh cilantro, chopped (for garnish)
Salt and pepper to taste
Cooking oil for frying
Instructions:
Prepare Avocado Fries:
In a bowl, season the avocado fries with salt and pepper. Set up a dredging station with flour, beaten eggs, and panko breadcrumbs.
Dip each avocado fry into the flour, then the beaten eggs, and finally, coat it in the panko breadcrumbs.
