Seed oils are new, within past century…
-forever, we cooked with tallow, suet, lard, butter
Olive Oil? not an ancient foodstuff
-used as medicine and for anointing body
-not used as food until 20th century
OIL was used as
LUBRICANT for machinery
in industrial revolution
-first: whale oil
-then: cottonseed oil

Chemistry of fatty acids

-saturated fats: stable, no double bonds

-unsaturated oils: unstable due to double bonds
-easily go rancid; oxidize

Hydrogenation enables unsaturated oils to become
stabilized and harden into margarine, Crisco, etc.

Seed oils must go through refinery processes…
-high pressure, high heat, hexane solvent,
-steamed, bleached, stabilized, colored

Basically same as making ETHANOL from corn
