This Coconut Curry Shrimp Soup recipe will amp up the flavors that might be lacking on your PSMF diet day! This soup comes together so fast and makes a perfect lunch with some PSMF bread or Keto buns.

**Ingredients to make the shrimp coconut soup as shown: 2 Servings
. 6 oz thawed shrimp (next time I would make this 8-10oz)
. 2 green onions
. 1 tbsp grated ginger
. 1 tsp red curry paste
. 1 tsp each of ground coriander and ground cumin
. 1/4 tsp garlic powder
. 6 oz lite coconut milk
. juice of 1/2 lime
. salt & pepper to taste
. cilantro (optional)

Macros per serving: 140 calories, Protein: 18.2g, Fat: 6.1g, Total Carbs: 3.4, Fiber: 0.5, Net Carbs: 2.9
