Paneer tikka
Ingredients:
Paneer 250 grams (cubed)
Mustard oil 1 tbsp
Kashmiri red chilli powder 1 tbsp
Hung curd 3 tbsp
Ginger garlic chilli paste 1 tbsp
Kashmiri red chilli paste 2 tbsp
Cumin powder 1 tsp
Garam masala 1/2 tsp
Turmeric powder 1/4 tsp
Coriander powder 1 tsp
Black salt 1/4 tsp
Roasted kasuri methi a pinch
Green cardamom powder a pinch
Fresh coriander 1 tbsp (chopped)
Lemon juice 1/2 tbsp
Salt to taste
Live charcoal + ghee (for smoking the marinade)
Pita bread
Ingredients:
Luke warm water 1/4th cup
Luke warm milk ½ cup
Curd ½ cup
Olive oil 1 tbsp
Powdered sugar 2 tbsp
Refined flour 2 cup
Wheat flour 1 cup
Baking powder 1 tsp
Baking soda 1/4th tsp
Salt 1 tsp
Oil as required
For tahini
Ingredients:
White sesame seeds 1 cups
Salt to taste
Olive oil 1/4th cup
For hummus
Ingredients:
Chickpeas 1 cups (soak for 7-8 hours)
Salt to taste
Garlic 3-4 cloves
Homemade tahini paste 1/3rd cup
Lemon juice 1 tbsp
Olive oil 1 tbsp
Salt to taste
Garlic sauce
Ingredients:
Mayonnaise 1/2 cup
Curd 1 cup (whisked)
Lemon juice 1 tsp
Powdered sugar 1/2 tsp
Black pepper powder a pinch
Garlic 3-4 cloves (grated)
Salt to taste
Fresh coriander / parsley 1/2 tsp (chopped)
