Baked Ranch Chicken and Rice

This is an older recipe from the Land O Lakes butter company. If you need a quick weeknight meal, this will make your family happy. Recipe is below!

Ranch Chicken and Rice Bake

3/4 Cup uncooked long grain rice
3/4 Cup Water
3/4 Cup Milk
1 (10.75 oz) can condensed cream of mushroom soup
1 (16 oz) package frozen vegetables
2 Tbsp Land O Lakes unsalted butter, melted
2 Tbsp Dijon mustard
2 Tbsp grated Parmesan cheese
2 Tbsp dried bread crumbs
1 Tbsp dried ranch dip seasoning mix
4 (4-6 oz each) boneless skinless chicken breasts

Heat oven to 400F. Combine rice, water, milk, soup, and
vegetables in large bowl. Spoon mixture into greased 13x9
inch baking dish.

Combine melted butter and mustard in a small bowl. Brush each
chicken piece with mustard mixture.

Combine Parmesan cheese, bread crumbs, and ranch mix in a pie
plate. Mix well. Dip chicken into bread crumb mixture to coat all sides well. Place chicken onto rice mixture in casserole dish. Cover
tightly and bake for 40 minutes, uncover and continue baking for 15 to 25 more minutes or until chicken reaches internal temperature of 165F.

Remove casserole from oven and let stand for 15 minutes before eating.
