The BEST Lemon Blueberry Cupcakes!

Ingredients for cake:
6 egg whites - beaten to stiff peaks
2/3 cup butter
1 1/2 cups coconut sugar
2 tsp vanilla
1 cup milk
1 Tablespoon vinegar
3 cups flour
2 tsp baking soda
2 cups blueberries

Ingredients for frosting
16 oz cream cheese - softened
1 cup butter - softened
1/2 cup honey
1 Tablespoon vanilla
2 teaspoons lemon zest
juice from 1/2 lemon
1/2 cup blueberries
