Drooling over this video by EverydayHalth - Personally, I make Chickpea Curry almost every week, it's so tasty and perfect for veginners, aka vegan-beginners ** Ingredients: 1 can of chickpeas, 1 onion, 2 cloves of garlic, a piece of ginger, grated; 1 tomato, diced; 1 can of coconut milk; 1 tsp each of ground cumin, coriander, turmeric, and garam masala; a pinch of chili powder, a handful of fresh cilantro, chopped for garnish; 2 tbsp of vegetable oil
