Carrots: A Fantastic Simple Survival Crop

Carrots are incredibly easy to grow. You can eat them fresh and overwinter them in the garden bed if you cover them with a thick layer of mulch or leaves. We overwintered these and harvested them in April when they were incredibly sweet. We freeze-dried them and now we can enjoy those carrots for up to 25 years. They are simply delicious rehydrated or you can just snack on them.
