Ingredients:
1 lb boneless, skinless chicken thighs, diced
2 cups Arborio rice
1 cup mixed mushrooms (such as cremini and shiitake), sliced
1 onion, finely chopped
3 cloves garlic, minced
4 cups chicken broth, kept warm
1 cup dry white wine
1/2 cup Parmesan cheese, grated
1/4 cup unsalted butter
2 tablespoons olive oil
Salt and black pepper to taste
Fresh parsley for garnish 🌿
Instructions:
Prepare the Ingredients:
Season the diced chicken thighs with salt and pepper. Rinse the Arborio rice under cold water and set aside. Ensure the chicken broth is warm in a separate pot.
Sauté Chicken and Mushrooms:
In a large skillet, heat olive oil over medium-high heat. Add the diced chicken and cook until golden brown. Add the sliced mushrooms and sauté until they are tender and browned. Remove the chicken and mushrooms from the pan and set aside.
Sauté Onion and Garlic:
In the same pan, add a bit more olive oil if needed. Sauté the finely chopped onion and minced garlic until translucent and aromatic.
Toast Arborio Rice:
Add the Arborio rice to the pan and stir to coat it in the flavorful mixture. Toast the rice for a couple of minutes until the edges become slightly translucent.
Deglaze with White Wine:
Pour in the dry white wine, stirring constantly until it is mostly absorbed by the rice. This step adds a layer of brightness and acidity to the dish.
Simmer with Chicken Broth:
Begin adding the warm chicken broth one ladle at a time, stirring continuously. Allow the rice to absorb the liquid before adding the next ladle. Continue this process until the rice is creamy and cooked to al dente texture.
Combine Chicken and Mushrooms:
Once the rice is almost cooked, reintroduce the sautéed chicken and mushrooms to the pan. Stir to combine, letting the flavors meld together.
Finish with Butter and Cheese:
Remove the risotto from heat and stir in the grated Parmesan cheese and unsalted butter. This final touch adds a luxurious creaminess to the dish.
