Musakhan (Palestinian Sumac chicken with sauteed onions)

Musakhan is one of the most popular and traditional Palestinian recipes. Musakhan is all about fresh, simple ingredients: a good olive oil, tangy sumac, a hint of spices, onions caramelized to the point of being sweet and tender, perfectly roasted chicken and fresh bread. Simple yet very delicious

To boil the chicken
8 to 10 cups of water
Whole chopped chicken or any parts of your favorite
1 piece of cinnamon
Some black peppercorns
2 bay leaves
Some cardamom pods
Some of the cloves
Some of the all spices seeds
Some of the coriander seeds
1/2 teaspoon turmeric
2 teaspoons salt, or to taste
Half of a small onion

To fry the onions
1 cup olive oil
4 cups onion, chopped large pieces
Salt and black pepper
2 tablespoons sumac
1 cup chicken stock

The rest of the ingredients
Arabic tanoor bread or you can use Indian naan bread instead
1 cup fried or roasted slivered almonds
Chopped parsley for garnish
Mixed spices or cumin

Bake at 375 Fahrenheit until chicken
And the bread roasts a little
