2 cups corn (fresh off the cob or canned)
1/2 tbsp unsalted butter
1/4 cup mayo
1/4 sour cream

1/3 cup cotija cheese
1 tbsp cilantro, chopped
1 tbsp Tajin
1/4 cup chives, chopped

CHIPOTLE MAYO DRIZZLE
1/2 cup mayo
1 chipotle chile, canned
1 tbsp sauce from chipotle can Juice from 1/2 a lime
1 garlic clove
