Healthy Pumpkin Sheet Cake - Pumpkin Dessert Recipes
This dessert recipe for pumpkin sheet cake I have been perfecting for months. It originally started from a recipe that included butter, lots of sugar and regular flour. I transformed that into a low calorie dessert recipe. I use calabaza pumpkin because it has the best texture for the cake to come out moist and not mushy. I removed butter and replaced it with yogurt. Added minimum amount of sugar but if it is not sweet enough for you - add more, or make cream cheese frosting on top. Best of all - one serving of this sheet cake has only 88 calories and 5 grams of protein. Gluten free is a nice bonus:)
Ingredients
- 1 cup of garbanzo bean flour
- 150 g buckwheat flour
- 1.5 oz sugar
- 610 g roasted calabaza pumpkin (wrap in foil and roast for 35-45 minutes at 375 F)
- 3 - 4 very ripe bananas = 12 oz
- 4 eggs
- 150 g non fat greek yogurt
- 0.5 tsp salt
- 1 tsp baking soda
- 1.5 tsp baking powder
- 2 tsp cinnamon
