Mangalore style sanjeera
Ingredients:

2 cups rice flour
1 cup jaggery, grated
1/4 teaspoon cardamom powder
1/4 teaspoon salt
Oil for frying
Instructions:

In a large bowl, combine the rice flour, jaggery, cardamom powder, and salt.
Add enough water to form a soft dough.
Knead the dough for 5-7 minutes, or until it is smooth and elastic.
Cover the dough with a damp cloth and let it rest for 30 minutes.
After 30 minutes, divide the dough into small balls.
Roll out each dough ball into a thin puri.
Heat oil in a kadhai or deep frying pan over medium heat.
Once the oil is hot, fry the puris one by one until they are golden brown and crispy.
Remove the puris from the oil and drain on a paper towel-lined plate.
Serve the sanjeera hot with a side of coconut chutney or milk.
Tips:

For a richer flavor, you can use jaggery syrup instead of grated jaggery.
If you don't have cardamom powder, you can substitute it with ground cardamom seeds.
To make sure that the puris are fried evenly, make sure that the oil is hot enough before frying them.
If the oil is not hot enough, the puris will absorb too much oil and become soggy.
You can also bake the sanjeera instead of frying them. To do this, preheat your oven to 350 degrees Fahrenheit and bake the puris for 10-12 minutes, or until they are golden brown and crispy.
