1.5 lbs (700g) chicken, cut into pieces2 large onions, finely chopped2 tomatoes, chopped4 cloves garlic, minced1-inch piece of ginger, grated2 green chilies, slit1/2 cup yogurt1/2 cup cooking oil2 teaspoons cumin seeds1 cinnamon stick4-5 green cardamom pods4-5 cloves1 bay leaf1 teaspoon turmeric powder2 teaspoons coriander powder1 teaspoon cumin powder1 teaspoon red chili powder (adjust to your spice preference)Salt to tasteFresh coriander leaves for garnishInstructions:In a large pot, heat the cooking oil over medium heat. Add the cumin seeds, cinnamon stick, green cardamom pods, cloves, and bay leaf. Sauté for a minute until they release their aroma.Add the chopped onions and sauté until they turn golden brown.Add the minced garlic, grated ginger, and green chilies. Sauté for a couple of minutes until the raw smell disappears.Stir in the turmeric powder, coriander powder, cumin powder, and red chili powder. Cook for a minute to release the flavors.Add the chopped tomatoes and cook until they become soft and the oil starts to separate from the mixture.Add the chicken pieces and cook for 5-7 minutes, stirring occasionally until they turn white.Whisk the yogurt in a separate bowl and then add it to the pot. Cook for another 5 minutes, allowing the chicken to absorb the flavors.Pour in enough water to cover the chicken. Season with salt, and let it simmer, covered, for about 20-25 minutes, or until the chicken is tender and fully cooked.Garnish with fresh coriander leaves and serve your delicious homemade chicken curry with rice or naan.
