My Delicious Homemade Cheesecake, Old Fashioned Southern Cooking

Cheesecake-plain or Oreo
1/2 BOX VANILLA WAFERS
6 TBSP. BUTTER OR MARGARINE
3 8OZ. BLOCKS CREAM CHEESE (ROOM TEMP)
3/4 CUP GRANULATED SUGAR
3 EGGS
2 TSP. VANILLA EXTRACT
1 1/2 CUPS WHIPPING CREAM
For Crust: Crush half box of wafers and add 6 tbsp. melted margarine and mix well and press into the bottom of a spring form cheesecake pan. For Cake: Put your whipping cream in freezer (10 minutes). Use electric stand mixer with paddle attachment and mix cream cheese and sugar until fluffy. Add eggs one at a time. After blended, turn off mixer and scrape sides and bottom of mixing bowl. Now add your cold whipping cream and vanilla. Place in a spring form cheesecake pan and fill to the top. Bake at 350 for first 30 minutes and turn oven down to 325 for last 30 minutes. When cake has set up completely (no jiggles) turn off oven and leave in oven for an hour before removing.
Take spring form off outside of cheesecake and chill before serving. Top with fruit if desired.
