How to make Scrumptious Kaiserschmarrn (Pancake Dessert or Dinner)

This is a wonderful Recipe for a Kaiserschmarrn, a Pancake Dessert served with Fig, Berry Jam & Apple Sauce. Or omit the Powdered Sugar and serve as Dinner or Lunch with a tossed Salad.

Kaiserschmarrn Ingredients:
1 cup Flour
3 Eggs
3/4 cup Whole Milk
4 tbsp Sugar, divided
1 tsp Vanilla
Pinch of Salt
1/4 cup Raisins
2-1/2 tbsp Rum
3 tbsp Butter, divided
Powdered Sugar

Soak Raisins in Rum for 10 Minutes drain & dry, set aside.
Separate Eggs.
Cream together Egg Yolks, Vanilla, Salt & 2 tbsp Sugar.
Incorporate alternately Flour & Milk, mix well, set aside.
In separate bowl beat Egg Whites until stiff.
Fold Egg Whites (in batches) into Flour Mixtures, do not over mix.
Melt 2 tbsp of Butter in 12" Skillet on med Heat.
Pour in Batter and cook for 3 Minutes.
Sprinkle with Raisins and continue cooking until bottom is golden, approx. 3 more Minutes.
Keep checking, when golden cut in quarters and flip.
Continue cooking until golden, then cut in bite sized pieces.
Add rest of Butter and sprinkle with remaining Sugar.
Stir and cook a few more Minutes.
Dust with Powdered Sugar before serving.
