Egg Puffs are a popular Indian snack made with a flaky pastry filled with a spicy and flavorful egg mixture. Here's a recipe for making Egg Puffs:

Ingredients:

For the pastry dough:

2 cups all-purpose flour
1/2 cup cold butter (cut into small cubes)
1/2 teaspoon salt
1/2 cup cold water
For the egg filling:

4 hard-boiled eggs, chopped
1 tablespoon oil
1 small onion, finely chopped
1 small tomato, finely chopped
1/2 teaspoon ginger-garlic paste
1/2 teaspoon red chili powder
1/4 teaspoon turmeric powder
1/2 teaspoon garam masala
Salt to taste
Fresh coriander leaves, chopped (for garnish)
For egg wash:

1 egg
A pinch of salt
Instructions:

Prepare the pastry dough:
a. In a mixing bowl, combine the all-purpose flour and salt.
b. Add the cold, cubed butter and mix it into the flour until you get a crumbly texture.
c. Slowly add cold water and knead the mixture into a smooth dough.
d. Wrap the dough in plastic wrap and refrigerate for 30 minutes.

Prepare the egg filling:
a. Heat oil in a pan and add the chopped onions. Sauté until they turn translucent.
b. Add the ginger-garlic paste and sauté for a minute until the raw smell disappears.
c. Add the chopped tomatoes and cook until they become soft and the oil starts to separate.
d. Add red chili powder, turmeric powder, garam masala, and salt. Cook for a couple of minutes.
e. Add the chopped hard-boiled eggs and mix well. Cook for another 2-3 minutes. Garnish with fresh coriander leaves and set the mixture aside to cool.

Preheat your oven to 350°F (180°C).

Assemble the egg puffs:
a. Roll out the chilled pastry dough on a floured surface into a rectangle, approximately 1/4-inch thick.
b. Cut the dough into squares or rectangles, depending on your preference.
c. Place a spoonful of the egg filling in the center of each square.
d. Fold the pastry over to form a triangle or rectangle and seal the edges by pressing them together. You can use a fork to create a decorative edge.
e. Beat an egg with a pinch of salt and brush it over the pastry to give it a shiny finish.

Place the prepared egg puffs on a baking tray lined with parchment paper.

Bake in the preheated oven for about 20-25 minutes or until they turn golden brown and flaky.

Remove the egg puffs from the oven, let them cool for a few minutes, and then serve them hot with ketchup or chutney.
