In this video I show you how to make Salmon Cakes. Are these better than crab cakes? I think so but I'll let you be the judge.

RECIPE

8 Oz Salmon
1 Lemon
5 Bay Leaves
1 Small Stalk Dill or 1 tsp Dried Dill
1 tsp Peppercorns
2 Cloves Garlic, Crushed
1/4 Cup Salt
1 Egg
1 oz Ground Pork Rinds
1/4 tsp Black Pepper
2 Tbsp Not Mayo (https://www.youtube.com/watch?v=woL2detxr8M&t=1s)
2 Tbsp Butter, unsalted

1) In a pot, add 6 cups of water and set to medium high heat. Cut your lemon in half and squeeze this into the water. Alongside that, add the bay leaves, dill, peppercorns, garlic, and salt. Bring this to a simmer.
2) Once at a simmer, add your salmon filet and let poach for about 5 minutes. After that 5 minutes, turn off the heat and let sit for an additional 5 minutes. Remove from the water.
3) Break up the salmon into a mixing bowl and add the egg, pork rinds, black pepper, and not mayo. Use a spatula to break this up until there are no longer large chunks of salmon.
4) Place a pan over medium heat along with your butter and let it melt. Once it's melted, wet your hands and scoop out about 1/4 cup of your salmon cake mixture. Press this into a rough patty and place into the pan. Repeat until all of the mixture is done. Let cook on one side for about 3 minutes or until golden brown. Flip and let cook for an additional 3 minutes or until the salon cakes are lightly firm. Serve.
