3 favorite meat recipes instead of bought sausage! I always have this meat in my fridge! Meat prepared according to these recipes is much tastier than store-bought sausage! I make these recipes all the time! My relatives are very fond of such meat for sandwiches and side dishes. These recipes are very simple, you are guaranteed to succeed! Taste carefully, like me, and you will cook a very tasty meat snack!

Pork and chicken (1:1)
I cut the meat into long thin slices.
I add the chicken fillet to the rest of the meat and be sure to weigh it out.
The meat must be mixed very well.
Salt kitchen 10 gr.
Salt nitrite 10 gr.
A mixture of spices to taste 4 gr.
I have this: ground allspice, ground black pepper, and dry garlic.
Garlic 3 cloves.
Cold water 80-100ml.
I mix well.
I wrap the meat in foil.
I'm constantly compacting the meat.
I wrap the sausage in cling film (6-7 layers). 2
I fix the edges of the package.
I put the sausage in water and heat the water to 80°C. I turn the fire down as much as possible.
Cover with a lid and cook at this temperature for 1 hour and 20 minutes.
I take the sausage out of the water.
I put the cooled sausage in the fridge for 4-8 hours.
I dry the sausage with paper towels.
Sprinkle with a mixture of sesame seeds, mustard, and paprika, if you like.
Recipe number 2
Pork neck (neck) 700-800 gr.
I cut the meat into small, evenly sized-pieces.
Salt normal 13.5 gr.
Nitrite salt 13.5 gr.
Ground black pepper 1 tsp.
Dried garlic 2 tsp
Nutmeg 1 tsp
Potato starch 1 tbsp. l.
ice water 150 ml.
I mix well. The water should be fully absorbed by the meat.
I cover the bowl with cling film and put it in the fridge for 24 hours.
Solo 150 gr.
I cut it into small cubes.
I fill it with boiling water.
I shift the fat in ice water.
I put the cooled fat on a plate.
Cover with cling film and place in the fridge for 24 hours.
I grind it in a fine mesh meat grinder.
I add fat.
I mix well.
I grease the casserole dish with vegetable oil.
I also smear my hands with vegetable oil (you can also just use water).
I move the fill into the shape.
I condense well.
Ketchup (any favorite) 1 tbsp. l.
I cover the form for baking with foil.
I put it in the oven. I bake for 1 hour at 100-110°C and 40-45 minutes at 130°C.
It can also be eaten hot. But I love it cold, like sausage.
So I cover it with foil and put it in the fridge to cool for 4-5 hours.
Recipe number 3.
Pork 1 kg 200 gr.
For this recipe, I use the fat part. (Neck).
I make many punctures in it with a thin skewer.
Salt 1.5 tsp
Peppercorns 0.5 tsp
Pepper 5 pcs.
Coriander 1 tsp
Rosemary 1 tsp
Thyme 1 tsp
Bay leaf 3 pcs.
water 0.5 l.
Garlic 3=4 cloves.
I bring the marinade to a boil and cook it for 3-4 minutes.
I take it off the fire and let it cool.
I pour the marinade into the meat bag.
I put the Maso in the fridge for 12-24 hours.
I tie the meat together with kitchen twine to make the meat tighter.
I roast the meat over medium heat.
Second marinade.
French mustard 2 tbsp. l.
soy sauce 2 tbsp. l.
vegetable oil 1 tbsp. l.
Sweet and Sour Chili Sauce 1 tsp.
Sweet and Sour Chili Sauce 1 tsp.
Garlic 3 cloves.
Ground black pepper 0.5 tsp.
I spread the meat on the foil.
Spread the marinade evenly over the meat.
I wrap the meat very tightly in foil.
I put the meat in the oven preheated to 180°C for 90 minutes.
This meat can be served hot! It's very juicy and tasty.
But today I want to cook meat for sandwiches and snacks. So I let the meat cool down.
Put the meat in the fridge for 4-8 hours.
Mmmmm! What a beauty! The meat is so juicy and tender!!
