Recipe (makes 8-10 buns) 👇

Ingredients
3 cups cooked sushi rice
3 tsp cornflour
2 Tbsp warm water (depending on how dry your rice is)
3 Tbsp rice wine vinegar
3 tsp sugar
1 tsp salt
Oil (for frying)
Flakey salt (for sprinkling)

Method
1) In a small bowl, combine the water, rice wine vinegar, sugar and salt. Stir to dissolve. In a large microwave-proof mixing bowl, combine the rice, cornflour and vinegar mixture. Stir to combine then heat in microwave in 30 second bursts, stirring in between until the rice becomes sticky - you can also do this on the stovetop. Add rice to a large baking dish or tupperware container and press down so it is about 1cm in thickness. Cover and place in fridge for 30 minutes.
2) When ready to fry, heat 1cm of oil in a large frying pan to medium-high heat or around 170C. Using a bowl or circle cutter, cut circles out of the rice to form buns (remember to keep and re-shape unused rice!). Fry each bun for 2-3 minutes on each side or until golden brown. Once done, remove bun from oil, place on a cooling rack and sprinkle with flakey sea salt.
3) To serve, add any toppings you wish for your occasion/time of day and devour!
