INGREDIENTS :

1 kg chicken thighs ( 35.2 oz )
800 grams chopped tomatoes in juice ( 28.2 oz )
130 grams green olives ( 4.58 oz )
100 grams plain flour ( 3.52 oz )
10 grams butter ( 0.35 oz )
10 grams chopped thyme ( 0.35 oz )
10 grams chopped basil ( 0.35 oz )
250 ml chicken broth ( 8.45 fl oz )
1 chopped red bell pepper
1 chopped medium onion
1 chopped green chili pepper
4 minced garlic cloves
2 + 1 tablespoons olive oil ( 29 + 14.5 ml )
1 teaspoon dried oregano ( 1 gram )
1/4 teaspoon salt ( 0.57 grams )
1/4 teaspoon ground black pepper ( 0.58 grams )
salt & pepper ( seasoning )

INSTRUCTIONS :

.season chicken thighs with salt & pepper ( both sides )
.coat chicken thighs in plain flour
.in a pan on medium heat add 10 grams butter
.once melted add 2 tablespoons olive oil
.cook chicken thighs on each side for 2 minutes ( 4 minutes total )
.in a large oven proof pan on medium heat add 1 tablespoon olive oil
.once heated add 1 chopped medium onion, cook for 1 minute
.add 4 minced garlic cloves, cook for 1 minute
.add 1 chopped green chili pepper, 1 chopped red bell pepper
.mix well & cook for 1 minute
.add 250 ml chicken broth, 800 grams chopped tomatoes in juice & mix well
.add 130 grams green olives, 1 teaspoon dried oregano
.add 1/4 teaspoon salt, 1/4 teaspoon ground black pepper
.add 10 grams chopped basil, 8 grams chopped thyme ( leave some thyme for garnish )
.mix well
.place chicken thighs into sauce
.submerge chicken in sauce
.cover with lid
.place in preheated oven 180 c / 356 f for 40 minutes
