SICILIAN RECIPES: FENNEL AND ORANGE SALAD

An authentic Sicilian recipe, from our kitchen.

Maria prepared "Fennel and orange salad" for us.

Ingredients
1 fennel
1 orange
1 lemon
1 small spring onion
4 anchovies fillet (alternatively smoked herring)
olive oil
salt

Instructions
Take away the fennel’s hardest part, wash and slice it. Let it drain a few minutes and then add some salt, grated lemon peel and some lemon juce. Mix and wait.
The time you wait, prepare the other ingredients: zest orange and dice it then slice spring onion.
Now you are ready to prepare your dish! First put fennel on the dish, then step by step add orange, spring onion, achovies fillet and some orange zest.
Now olive oil and... Salad is ready!
