Ingredients:
2 fresh trouts, cleaned and gutted
1 lemon, thinly sliced
4-6 sprigs of fresh thyme
Salt and black pepper, to taste
2 tablespoons olive oil
For the Garden Vegetables:
1 cup cherry tomatoes, halved
1 zucchini, sliced into rounds
1 yellow bell pepper, sliced
1 red onion, thinly sliced
2 cloves garlic, minced
2 tablespoons balsamic vinegar
Salt and black pepper, to taste
Fresh basil leaves, for garnish
Instructions:
Prepare the Wood Fire:
Build a wood fire in your outdoor grill or fire pit. Let it burn down until you have hot embers. Push the embers to one side of the grill for indirect cooking.
Season the Trout:
Season the inside and outside of the trouts with salt and black pepper. Stuff the cavity of each trout with lemon slices and fresh thyme.
Cook the Trout:
Rub the trouts with olive oil. Place them on the grill grate, opposite the hot embers, to cook indirectly. Cover the grill and let the trouts cook for about 15-20 minutes or until the flesh flakes easily with a fork.
Prepare the Garden Vegetables:
In a large bowl, combine cherry tomatoes, zucchini rounds, sliced yellow bell pepper, red onion, and minced garlic.
Drizzle the vegetables with olive oil and balsamic vinegar. Season with salt and black pepper. Toss to coat evenly.
Grill the Vegetables:
Spread the seasoned vegetables on a grilling tray or a foil packet. Place the tray directly over the hot embers and grill, stirring occasionally, until the vegetables are tender and slightly charred, about 10-15 minutes.
Serve and Enjoy:
Carefully remove the trouts from the grill and place them on a serving platter.
Surround the trout with the grilled garden vegetables.
Garnish with fresh basil leaves for a burst of color and extra freshness.
