Ingredients:
- 1 cup basmati rice
- 2 cups mixed vegetables (such as carrots, peas, beans, cauliflower, etc.)
- 1 onion, thinly sliced
- 2 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 2 tablespoons ghee or oil
- 1 teaspoon cumin seeds
- 2-3 whole cloves
- 2-3 green cardamom pods
- 1 cinnamon stick
- 1 bay leaf
- 2 cups vegetable broth or water
- Salt to taste
- Fresh coriander leaves for garnish

Instructions:

Rinse the basmati rice in cold water until the water runs clear.
Soak the rice in water for 15-20 minutes, then drain.

Heat ghee or oil in a large pan or pot over medium heat.
Add cumin seeds, cloves, cardamom pods, cinnamon stick, and bay leaf.
Saute for a minute until fragrant.

Add sliced onions, minced garlic, and grated ginger to the pan.
Cook until the onions turn golden brown.

Add the mixed vegetables to the pan and cook for 2-3 minutes, stirring occasionally.
