Vegetables pulao
Sure! Here's a simple recipe for vegetable pulao:
Ingredients:
- 1 cup basmati rice
- 2 cups mixed vegetables (such as carrots, peas, beans, cauliflower, etc.)
- 1 onion, thinly sliced
- 2 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 2 tablespoons ghee or oil
- 1 teaspoon cumin seeds
- 2-3 whole cloves
- 2-3 green cardamom pods
- 1 cinnamon stick
- 1 bay leaf
- 2 cups vegetable broth or water
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:

Rinse the basmati rice in cold water until the water runs clear.
Soak the rice in water for 15-20 minutes, then drain.

Heat ghee or oil in a large pan or pot over medium heat.
Add cumin seeds, cloves, cardamom pods, cinnamon stick, and bay leaf.
Saute for a minute until fragrant.
3.
Add sliced onions, minced garlic, and grated ginger to the pan.
Cook until the onions turn golden brown.
4.
Add the mixed vegetables to the pan and cook for 2-3 minutes, stirring occasionally.
5.
Add the drained basmati rice to the pan and sauté for a minute, coating the rice with the spices and vegetables.
6.
Add vegetable broth or water to the pan.
Bring it to a boil, then reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
7.
Once the rice is cooked, fluff it up with a fork.
Taste and adjust salt if needed.
8.
Garnish with fresh coriander leaves and serve hot.
