Thai cuisine has lots of different curry variations. Here I’m making yellow curry paste. This basic curry paste is much milder than red or green curry. Remember when you make this homemade yellow curry paste, don’t forget to toast the dry spices in a skillet over the lowest heat before grinding them in a mortar.
You can also use a food processor to make this Thai yellow curry paste easier. Ideally, curry paste needs to be used immediately, but it is okay to freeze the paste. Make sure to freeze the paste into a bag, press all the air out, and seal. It is best you use within 2-3 months.

How to make yellow curry paste, you’ll need :

1 tsp cumin seeds
1 tsp coriander powder
1/4 tsp white pepper
1 big chili/ dried
1 tsp salt
1 lemongrass
1 tbsp galangal
2 tbsp ginger
1 tbsp turmeric
1 tsp curry powder
100 gr shallots
2 gr shrimp paste
