Ingredients:

1 cup pasta (of your choice)
1 tablespoon oil
1 onion, finely chopped
1 bell pepper, thinly sliced
1 cup mixed vegetables (carrots, peas, corn, etc.)
2 tomatoes, pureed
2 teaspoons ginger-garlic paste
1 teaspoon cumin powder
1 teaspoon coriander powder
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder (adjust to taste)
1/2 teaspoon garam masala
Salt to taste
Fresh coriander leaves for garnish
Instructions:

Cook the pasta according to package instructions. Drain and set aside.

In a large pan, heat oil over medium heat. Add chopped onions and sauté until they become translucent.

Add ginger-garlic paste and sauté for another minute until the raw smell disappears.

Add sliced bell peppers and mixed vegetables. Cook for a few minutes until the vegetables are slightly tender.

Pour in the tomato puree and cook until it thickens.

Add cumin powder, coriander powder, turmeric powder, red chili powder, garam masala, and salt. Mix well to combine the spices.

Allow the masala to cook for a few minutes until the oil starts to separate from the mixture.

Add the cooked pasta to the masala mixture. Toss everything together until the pasta is well-coated with the masala.

Garnish with fresh coriander leaves.
