Ingredients:
- 4 large eggs
- 1 cup finely chopped cabbage
- 1/2 cup diced carrots
- 1/2 cup sliced green onions
- 1/4 cup diced bell peppers (red, yellow, or green)
- 1/4 cup sliced mushrooms
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1/4 cup cooked and chopped chicken (optional)
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- Salt and pepper to taste
- Spring roll wrappers
- Oil for frying

Instructions:
1. Start by whisking the eggs in a bowl. Season with a pinch of salt and pepper, and scramble them in a hot skillet. Set them aside.

2. In the same skillet, heat some oil and sauté the garlic and ginger until fragrant.

3. Add the chopped vegetables and chicken (if using), and stir-fry until they are tender-crisp.

4. Pour in the soy sauce and oyster sauce, if desired, and toss to combine.

5. Mix in the scrambled eggs, and cook for another minute or so until everything is well combined.

6. Take your spring roll wrappers, place a spoonful of the filling in the center, and wrap them up following the package instructions.

7. Heat oil in a deep pan or fryer, and carefully fry the egg rolls until they are golden brown and crispy.

8. Drain on paper towels to remove excess oil.

9. Serve your homemade egg rolls hot with your favorite dipping sauce – sweet chili sauce, soy sauce, or even plum sauce!
