Ingredients::
(makes 4 pockets)
500g chicken thighs
3 tbsp tandoori masala
1 tsp chilli flakes
1 tsp coriander powder
1 tsp cumin powder
1 tsp salt
1 tsp black pepper
1 tsp pepper
1 tsp garlic powder
1 medium red onion finely sliced
2 bell peppers sliced
3 tbsp lemon juice
150g mozzarella

Spicy Mayo:

1 cup Mayo
1 tsp red chilli powder
1/2 tsp salt
1 tsp garlic powder

Pita (I used warbarton soft pita pockets)

Directions:
1. Heat oil in a pan, add chicken along with seasonings. Cook till chicken has changed colours
2. Add onion and peppers and fry for 3-5 mins or till slightly soften
3. Sprinkle mozzarella on top and steam on low heat till the cheese is completely melted
4. Open up pita and slather Mayo and add the filling. Enjoy!
