Today we're going to talk about vegetable carbohydrates and whether or not they will stop ketosis. Vegetables are carbohydrates. But, they don't spike insulin.

The glycemic index is the rate at which something will affect your blood sugars. Vegetables are low on the glycemic index, which means they will not stop ketosis.

Lowering your carbs can induce fat burning. But, if you don't have any vegetable carbohydrates in your diet, you're going to have a lot of waste in your body. This is called ketoacidosis.

If you don't consume vegetables while doing keto, you could potentially end up with a fatty liver. Some people consume the wrong types of vegetables, like corn. They could also be doing a lot of cruciferous vegetables, but they're sensitive to them, so they bloat, which can prevent weight loss. If this happens, try other kinds of vegetables. If you don't consume vegetables, you also won't be getting certain essential vitamins and minerals.
