In this video, we’re going to share with you a delicious recipe for strawberry chia pudding. Chia is loaded with omega-3 fatty acids, and it’s always great to find new ways to consume it.

This is a great healthy homemade chis pudding recipe that is low-carb and sugar-free. It’s easy, creamy, and delicious. This keto-friendly pudding has fresh strawberries in it, but not enough to kick you out of ketosis.

There's a lot of protein and nutrition in this strawberry chia pudding, and it’s very fresh tasting. This is a great little keto dessert—not a snack.
 
Strawberries and Cream Chia Pudding (or Popsicles!) Recipe:
Ingredients:
16 oz container of organic strawberries
¼ cup FiberYum or VitaFiber (liquid sweetener substitute)
1 ½ cups or 1 -13 ½ oz can of coconut milk
1 vanilla bean scraped (or 2 tsp vanilla extract, but I encourage using the bean!)
½ tsp finely grated lime zest
½ cup chia seed
 
Directions:
Put strawberries, sweetener, coconut milk, vanilla, and lime zest in a blender and blend until creamy and pink (1-2 minutes).
Put chia in a medium-sized bowl, pour strawberry mixture over the chia, and whisk. Let it sit for 10 minutes and whisk again. Place cover or plastic wrap over and let it chill for 3-4 hours to thicken. OR you can put this mixture into popsicle molds and freeze, for yummy strawberry cream pops! Enjoy!
