Canning 6 Months Worth of Salsa and Pico De Gallo

Today is a day that I have been waiting for. Ever since I first discovered Pressure canning I have wanted to preserve a year's worth of #tomatoes in various forms. From Diced Tomatoes to Tomato sauce and everything in between. Today I have checked #salsa off of my list. I canned 18 pint jars in about 2 hours. WORTH IT. All of the jars sealed, the first time. SCORE.

Along with the salsa I also canned 6 pint sized jars of #picodegallo I’m thinking this will only last 3-4 months, depending on if everyone (my family) likes it or not. Pico De Gallo is only loved by me, Stephanie, and my middle son, Landon. So I didn’t think we needed an equal amount of Pico as Salsa.
