Here's a simple recipe for Tinda Masala, a delicious Indian dish made with baby round gourds (also known as tinda or apple gourds) cooked in a flavorful masala sauce.

Ingredients:

- 250g baby round gourds (tinda)
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 1 onion, finely chopped
- 2 tomatoes, pureed
- 1 tablespoon ginger-garlic paste
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves for garnish

Instructions:

1. Wash and peel the baby round gourds. Cut them into quarters or halves, depending on their size.

2. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.

3. Add finely chopped onions and sauté until they turn translucent.

4. Stir in ginger-garlic paste and cook for a couple of minutes until the raw smell disappears.

5. Add tomato puree, turmeric powder, red chili powder, and coriander powder. Cook this masala until the oil separates from it and it thickens.

6. Add the chopped baby round gourds (tinda) to the masala. Mix well to coat the gourds with the masala.

7. Cover the pan and simmer on low heat. Stir occasionally and cook until the gourds are tender, which should take about 15-20 minutes.

8. Once the gourds are cooked, add garam masala and salt. Mix well and cook for an additional 2-3 minutes.

9. Garnish with fresh coriander leaves.

10. Serve hot with roti or rice.
