Welcome the cozy szn with this creamy- high protein - 10 minute - HRISSA BUTTER BEANS recipe!
It requires pretty much no effort, minimal ingredients and tastes insaneee🔥
INGREDIENTS:
Drizzle of olive oil
4 garlic cloves, chopped
2 tbsp homemade harissa (recipe pinned to feed)
2 heaping tbsp tomato paste
2 cans butter beans, with liquid
Salt & pepper to taste
1 cup full fat coconut milk
Chopped parsley for garnish
INSTRUCTIONS:
Heat a generous drizzle of olive oil in a large saucepan, add chopped garlic and sauté for a minute before adding harissa and tomato paste.
Fry for another 3 minutes on medium high heat.
Add 2 cans of butter beans along with the liquid, salt and pepper. Stir and cook for additional 2 minutes.
Finally mix in the coconut cream and cook for 2 minutes to thicken it up.
Garnish with chopped parsley.
Serve with your favorite bread / rice, or as is. Enjoy!
