In this video I bake a low-carb version of Rhubarb Crisp

Mark’s Rhubarb Crisp

Ingredients
Filling
1 ½ cup / 230g chopped rhubarb
½ cup / 125g sour cream
1 egg yolk
1 Tbsp / 7g almond flour
½ cup / 90g powdered monk fruit
¼ tsp cinnamon
¼ tsp Xantham gum

Topping
6 Tbsp / 72g Brown Swerve or Sukrin Gold (or regular no-cal sweetener)
5 Tbsp / 30g oat fiber
½ cup / 112g melted butter
¼ cup chopped pecans (optional)
½ tsp cinnamon
