White sauce noodles are a family favorite in our home, especially for my kids. The creamy, velvety sauce coating tender noodles makes for a comforting and delicious meal. It's heartwarming to see their faces light up with each bite, making it a go-to dish for our cozy family dinners/ lunches.

Here's a basic recipe for white sauce with noodles.

**Ingredients:**

- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup milk (at room temperature)
- Salt and pepper to taste
- Optional: green onion 1 cup
-noodles 1/2 packet

**Instructions:**

1. **Melt the Butter:** In a saucepan over medium heat, melt the butter until it's completely melted but not browned.

2. **Add Flour:** Sprinkle the flour over the melted butter. Stir continuously with a wooden spoon or whisk to create a smooth paste (roux). Cook for about 1-2 minutes, but do not let it brown.

3. **Gradually Add Milk:** Slowly pour in the milk while stirring constantly to avoid lumps. Continue to stir until the mixture thickens and becomes smooth. This may take around 5-7 minutes.

4. **Season:** Season the white sauce with salt and pepper to taste. If desired, add a pinch of ground nutmeg for a subtle flavor.

5. **Remove from Heat:** Once the sauce reaches the desired consistency (it should coat the back of a spoon), remove it from heat. If you used a bay leaf for flavor, remove it now.

6. Add boiled noodles in white sauce and mix thoroughly.
