These oatmeal cookies are super soft, chewy with the added subtle crunch of diced apples and filled with gooey, salted caramel that makes this the best oatmeal cookie ever. Not to mention they’re dairy free, egg free, and 100% *vegan*. They can also super easily be made gluten free. They’re quite literally the most dreamy oatmeal cookies you’ll ever make 🥹 SAVE the recipe below! ⬇️

RECIPE 🌿
▢ 2 cups all-purpose flour (or gluten free flour)
▢ 1 ½ tsp cinnamon
▢ 1 tsp baking soda
▢ 1 tsp salt
▢ 1 cup (2 sticks) vegan butter, softened
▢ 1 cup white sugar
▢ 1 cup brown sugar, packed
▢ 2 flax eggs
▢ 1 tsp vanilla extract
▢ 3 cups old fashion oats (or gluten free rolled oats)
▢ 2 cups green apples, diced
▢ 1/3 cup vegan salted caramel

1.Preheat oven to 350°F. Parchment line two baking trays.

2.In a mixing bowl, add all dry ingredients (flour, cinnamon, baking soda, salt). Mix to combine.

3.In another bowl, add butter and both sugar. Beat until light and fluffy. Add flax eggs and vanilla, beat until just combined. Add dry mixture and beat until combined again.

4.Add oats, using a wooden spoon, incorporate. Add diced apples and fold in. Scoop onto baking trays. Using a squeeze bottle, squeeze salted caramel into cookies in different spots.

5.Bake for 20-22 mins or until golden brown. Let cool and serve. Optionally, squeeze more caramel on cookies then serve.
