"Sun-Kissed Delights: Mastering the Art of Summer Focaccia with Ease!"

I made sure to get my hands on some of their flours to bake some bread at home… This easy focaccia is one of my favorite breads to make during summer!

RECIPE
- 300 g whole spelt flour (I used the ancient spelt flour by @biohof_lex)
- 200 g all purpose flour
- 375 g water
- 1 tsp (3 g) dry yeast (or 9 g fresh yeast)
- 10 g salt
- handful sundried tomatoes, finely chopped
- 1 tsp oregano
- 2 tbsp olive oil

Toppings (use whatever you like):
- olive oil
- cherry tomatoes
- rosemary
- oregano
- flaky salt

❶ In a large mixing bowl combine all ingredients for the dough. Let it sit for 15 minutes, then do a set of stretch & folds, cover and let it ferment in the fridge overnight.
❷ Drizzle some olive oil and semolina on a baking tray, stretch out the dough, cover and let it rest at room temperature for 1-2 hours.
❸ Drizzle more olive oil on top of the dough, dimple with your fingers, then add your toppings. Optionally spritz with some water.
❹ Bake in the preheated oven at 250° for 20-25 minutes until deep golden brown.
❺ Let it cool for at least 30 minutes. Enjoy!
