Shredded Mex Chicken🍗🇲🇽 made in my multi-lid @ninjakitchenuk 🥷

✨Ingredients✨
1kg Chicken
2 Onions
1 Red Pepper
1 Tin Chopped Tomatoes
1 Tin Kidney Beans
1 TBSP Olive Oil Vinegar
1 TBSP Garlic
1 TBSP Paprika
1 TBSP Cumin
1 TBSP Marjoram
1 TBSP Chilli
200ml Chicken Stock
Tomato Purée
Salt & Pepper

✨Method✨
🥷I used a ninja cooker but you can do this in a pan on the hob and slow cook if you don’t have one

🌶️ Sauté chopped onions and peppers in the oil until soft and then add in your paprika, chilli, cumin, garlic, salt and pepper.

🌶️ Let the vegetables soak up the spices for a couple of minutes before adding in chicken and browning.

🌶️ Next add your chicken and leave to slow cook or pressure cook in the ninja for 10 min and use the quick release after.

🌶️ Next remove the chicken and add your kidney beans, tomato purée and marjoram and allow it to reduce.

🌶️ Whilst you’re reducing the sauce shred the chicken and when done add back to the sauce for a few minutes to allow it all to mix and blend.

🙌🏼 I served mine with wild rice and broccoli but would also work well in wraps or tacos!
