A simple yet delicious bread, that everyone should know how to make.

RECIPE
- 360 ml water
- 400 g all purpose or bread flour (11-14% protein)
- 60 g whole wheat flour
- 4 g dry yeast
- 2 tsp sugar
- 2 tbsp olive oil
- 8 g salt
- 4 tbsp olive oil

Toppings:
- rosemary
- flaky salt
- cherry tomatoes
- olives
- whatever you like!

❶ In a bowl mix flour, water, sugar and olive oil. Mix until combined, then let it sit for 30 minutes.
❷ Combine yeast and 2 tbsp water and add it to the dough together with the salt. Mix until well combined and let it rest at room temperature for another 30 minutes.
❸ Do a set of stretch & fold’s, rest for 30 more minutes and repeat the stretch & fold.
❹ Cover the bowl and place in the fridge for 4-48 hours. The longer, the more complex flavors. I’d recommend to leave it at least overnight.
❺ Add some olive oil to the bottom of your cast iron pan or 9 x 13 inch baking pan, transfer the dough and spread it out without degasing it too much. Cover and let it rise for 1-2 hours.
❻ Dimple it with lightly oiled fingers, add some more olive oil and let it proof for 1 more hour.
❼ Finally add a generous pinch of flaky salt and some fresh rosemary (or whatever toppings you prefer) and bake at 250°C for 20-25 minutes.
❽ Remove from the pan and let it cool for at least 15 minutes.
