Chicken Macaroni Recipe

Preheat the oven to 205°C (400°F).
Place the chicken breasts on a baking dish lined with parchment paper. Sprinkle with BBQ chicken seasoning and rub it in so that the chicken is fully coated with seasoning.
Bake for 15 to 18 minutes, until the chicken is no longer pink in the centre. Remove the baking dish from the oven. Let the chicken rest for 5 minutes before cutting it up.
During this time, cook the pasta al dente in a large pot of boiling, salted water. Drain.
In the same pot, heat a little olive oil over medium heat. Cook the onion for 3 to 4 minutes.
Add the dairy blend and bring to a boil over medium heat. Add 375 ml (1½ cups) of cheese and stir until melted.
Add the macaroni and chicken. Stir. Divide the preparation into four ramekins. Use the remaining cheese to garnish each portion.
Bake for 5 to 7 minutes, until the cheese is melted
Bake for 2 to 3 minutes under the broiler, until the cheese is golden-brown.
Garnish with parsley before serving, if desired
