This no-bake cheesecake recipe is the perfect cheesecake for autumn/ fall. The crumbly, buttery base is topped with a smooth, sweet, cinnamony cheesecake batter. Topped with caramelised cinnamon apples and a butterscotch sauce, this recipe is UNREAL. Full recipe below.

Ingredients
500g / 2 cups cream cheese
270ml / 1 cup double cream
100g / 1/2 cup icing sugar
300g / 3 cups biscuits
100g / 1/3 cup unsalted butter
1 tsp cinnamon
for the apples:
3 apples
2 tsp soft light brown sugar
1 tsp cinnamon
1 tbsp butter
for the butterscotch sauce:
4 tbsp butter
4 tbsp double cream
4 tbsp soft light brown sugar

Instructions
Crush your biscuits to form a crumb before adding your melted butter. Combine and then press into a deep 8-inch baking tin with a removable bottom.
In a standing mixer, whip your 270ml double cream until firm peaks. Add your cream cheese and icing sugar and mix again, until combined and smooth.
Remove 1/3 of the batter and put into a bowl with 1 tsp cinnamon. Combine.
Add your regular cheesecake batter to the baking tin before spooning the cinnamon batter on top. Swirl together and then refrigerate for a minimum of 3 hours, preferably overnight.
Make your apples by thinly slicing the apples and putting the butter into a frying pan on a medium-high heat. Add the apples and fry for around 3 minutes, until softened. Then add the sugar and cinnamon and combine, continue to cook for a further couple of minutes and then remove from heat.
Place all of your butterscotch sauce ingredients into a bowl and microwave for approx. 1 minute. Remove from the microwave, stir together and the sauce should form. Microwave for slightly longer if needed.
Add your apples on top of the cheesecake before spooning on some sauce. Slice it up, add extra sauce and enjoy!
