Welcome to Kitchen With Musfara, where we bring you the authentic flavors of Pakistan and India. In this video, we'll teach you how to prepare a mouthwatering vegetarian dish - Aloo Mongray. This dish is a delightful blend of potatoes and moongray (mung beans), cooked to perfection in a flavorful curry.

Ingredients:
- 4 large potatoes, peeled and cubed
- 2 large tomatoes, chopped
- 1 large onion, chopped
- 2 green chilies, chopped
- 1 tsp coriander powder
- 1 tbsp red chili powder/flakes
- 1 tsp turmeric powder
- Salt, to taste
- 2 tbsp oil
- Fresh cilantro leaves, for garnish

Instructions:
1. Heat oil in a large pan over medium heat.
2. Sauté chopped onions until translucent.
3. Add chopped tomatoes and cook until they become soft and mushy.
4. Stir in chopped green chilies, coriander powder, red chili powder/flakes, turmeric powder, and salt. Mix well.
5. Add the cubed potatoes to the pan and coat them with the spices.
6. Pour enough water into the pan to cover the potatoes and let it come to a boil.
7. Reduce the heat, cover the pan, and allow the potatoes to cook until they turn tender (approximately 15-20 minutes).
8. Once the potatoes are cooked, turn off the heat and let the Aloo Mongray cool for a few minutes.
9. Serve it hot, garnished with fresh cilantro leaves. Enjoy your delicious Aloo Mongray with rice or roti!
